just gut them and scale them. Bread the whole thing and fry it. If not I just fillet as I would any other fish and then work with the little fillets. On some of the smaller fish you have to leave some bones but on bigger ones it can avoided. Great eating fish

I usually skin them, gut them and fry them. Unless they are really big i don't fillet them.

anyone else dip the eggs in batter and fry them too?

Fillet , dip in bread crumbs and fry in butter. Wonderful little perch mcnuggets.

Small trout and usually large mouth i cook whole but the perch I like to just suck down the nuggets.

I only keep the big ones and filet them. Just had a nice dinner of them.

The white perch are good but IMHO they don't hold a candle to yellow perch.
