Poor Beagle, Mako Pics
So was going thru some old pics and found these and figured id share. These are from when I lived and worked in Montauk at Inlet Seafood, my friend Jen was the executive chef and i was the sous chef.
We got the freshest seafood Ive ever eaten and saw some fish Ive never seen before in person, john dory, massive tilefish, scup that where bigger than most hubcaps, 8 lb lobsters, etc.
This was a poor beagle we got in whole (minus the head  ) and broke down for the restaurant, was a crazy experience breaking down a 6 foot shark. Thing was full of worms, like most sharks and swordfish, things are gross.
This was a great job and we had a lot of fun.
On a side note, montauk is so empty in the winter, you want to get away and get piece and quiet go there!

Heres a few more. We cooked this shark every way possible. Cajun, marinated, kabobs, fish tacos, baked, fried, grilled, etc.
best way was grilled with fresh homemade lemon butter and bacon fat, basted it while it was on the grill.

Ok here's some answers:
Currently I work at nacho Mammas in Bristol, awesome fresh homemade Mexican food.
We both went to jwu from 98 to 2001.
It was a sick job, left to come back to ri to buy a house and take a head chef position.
Jen is one of the nicest and coolest people you'll ever meet. We would drink jack Daniels and makers mark all night then go work a 14 hour day banging out top end food. Good times.
She still lives in montauk w her husband and new baby girl. They own a restaurant right on the water.
