Just before dinner...

I made my wife a little app.

A pound of Nantucket bay scallops lightly seasoned and rolled in a smoking pan for about 60 seconds...then dressed in a little 30 year balsamic just because I could.

Don't think we can get these back in Iowa

Try some black truffle oil in the pan and sprinkle with fennel pollen.Balsamic has too much acid for something so delicate, save it for your tomatoes with basil and mozz.If you have no pollen, try white pepper.
