Question dog fish

what part of this fish is edible ,I heard the belly is?
I'm bound to get a couple of these on monday

I will hazard a guess to say that if ther'es a recipie for something, I know it...
For this one, usually I say start with unhooking them, then either throw'em back or some prefer to cut them directly on the beach, then throw them back.
I think the popular misconception is that the brits use them for fish and chips...
Not so true...
You're much better off with skate...this I ahve a recipe for and if they're fresh, they're not that bad.
They're weird...most fish you cook get tougher the longer you cook them. Skate is the opposite. Squid is the only other sea creature that is like this.

If you're desperate, head and gut them on the beach. Rinse 'em well and ice if you're gonna be a while. I've cut them into steaks, marinated them and grilled them. They're not bad but they're not stipers!
