Prep for eel skins
Apologies if this has been covered ad nauseum in the past but a quick search didn't shed much light.
A buddy was telling me he "prepped" his eels before skinning them in a tupperware container of kosher salt, which would toughen the skins.
Anybody have thoughts about eel skin preps??
Thanks in advance for your thoughts

No need to do that, Aram. All that does is remove moisture. It makes then a bit easier to handle and skin, but again, not necessary.

I haven’t heard of doing that before skinning them but it may toughen up the skin a bit… I just wipe them down with a few paper towels to get the slime off and make them a little easier to work with.

Never heard of it either. After skinning , yes , before skinning , no.

The salt before will aid in removing the slim.

Aram, throw the "SKIN" in brine. leave them there until needed. I have skins for a few years in there. It toughens the skin up to aid a tight stretch b/4 ripping.

I read in OTW that if you use a worm blower to inject air under the eels skin it will help seperate the skin from the meat and it will peel off easier.
