What to do with all the veggies...

Since the "planting times" thread has been so succesful I figure I cant be the only one that is running out of new ideas for using up the wonderful abundance of fresh veggies. So why not share some ideas!

Tonite was a baking dish lined with #^&#^&#^&#^&ake mushrooms, layer of sliced tomatos, we used coconut oil but olive oil would work, few breadcrumbs sprinkled in, fresh basil, oregano, bake until mushrooms almost done and pop back in the oven for another minute topped with fresh mozz and basil. I sprinkled some red pepper flakes and yum!
