When you can snap the antennas, if they only bend they are not done. It really works. I learned it from my father in-law. A retired lobster fisherman.

actually RickB I found it funny.....I always get razzed when cooking lobster....I NEVER time it! I let the water boil of course throw it in and check every now and then....I pull the tail fins back and check the underside of the tail nearest to the body....when it has that "certain look" to it I pull it out! Cant really explain it....but it hasnt failed me yet!

If you can steam it with salt water (From the ocean) then it will taste much better. Be careful not to burn all the water off though.

i have worked for a 5 star restaraunt and we always steamed
shellfish. it gives it a much firmer texture. use only enough
water that will not dry up before its done cooking and add
2 tablespoons of white vinigar to the water. it really helps
bring out the flavor of the lobster, shrimp or crab. a 1 1/2 pound
lobster usually took 10 to 15 minutes to cook fully, depending
upon the molting stage of the shell.

I agree with Good N You. I was a longtime boiler, but tried steaming recently and I think it tastes just as good and there's not as much liquid to deal with coming out of the shell. I found if the water's already boiling it takes no more than 15 minutes for a 1 3/4 lb lobster.

Guys,
Its all depends on the size of the lobster! You ain't gonna cook a 25 pounder the same amount of time as you cook a chix!

I have to agree that a lobster is done when the antennas pull off easily. Also, steaming is the way to go. It tastes better and there is no water in the lobster, which makes it a lot less messy. Just ask Jasper White, the authority on lobster cooking.

Cooking Time For Lobster

I have over 40 years experience cooking lobster. Time to cook has nothing to do with it because lobsters vary in both size and water content. The best way to judge when they are properly cooked is when the white fat starts coming out of the shell. Also, if you have cooked them to long they will start to smell ( a funny burn't smell even though they are in water. If done properly, the coral (eggs) will have turned bright red.

By the way, they will be better if you steam rather than boil. - Same pot, about 1/2" of water and something to keep them off the bottom. Since steam rises, the ones on top will cook first.

Good Eating,

Lobsterman
