Was given a fresh caught fillet today. Should I try it or feed the sky rats at the end of the street ?

I’ve caught a bunch this year. Let them all go. Not enough room in my tin boat to wrestle them with those choppers bleed them and have a cooler with ice. It's been fun though.

Had my first bonito last night and was suspect about what to expect while fileting them a couple days ago, as the flesh was so mushy as compared to sea bass or tog. I marinated it for over a day in a bottle of chipotle mayo, some regular mayo and 1/4 stick of melted butter, grilled slowly in a covered grille and on one of the best inventions: a grille mat. What a treat and flavor was so yummy, to bad they won’t be around longer.

Cover the bonito in ice for a few hours before cleaning. Firms it up quite a bit making it easier

bled, gutted and head first into a brine ice bath on the boat and iced for an hour or two by the time I got home, hard to believe they fight as well as they do with that texture filet.
