I think you should practice a couple times in open water to get use to it, and flip it a few times. When your loaded with gear and you go over things can get a little disorganized, you want to know what to expect before it happens.
I have lost some gear overboard when kayak fishing. (rod reel lures ect) It is fun to be able to paddle out to the feeding school but it you flip it with a big fish on with light tackle...things get funky fast. And in those events when I was separated from the boat I can't imagine not having a pfd on. (Its not a matter of being a good swimmer...flip it in a big chop and you know what I mean.
