Buddy just got back from a trip south and I've got some fresh mahi any good recipes out there?

Agree with the Taco comment - I use Striper and Hake in tacos and they come out great. Fresh salsa is the key for me. In Hawaii everything was Mahi Mahi and was covered in macadamia nuts, not to say you have to go that way. I would flour and pan fry, its got a nice texture. Add whatever you want to pan when your done for a quick sauce - lotsa butter, lemons & capers, or Kalamata olives and hot pepper flakes with some diced tomatoes is another way I finish off fish and its really good. Pat the fish Dry, very dry, Mix either maple syrup or honey with some lime or lemon juice. Season the fish first with salt and pepper.
Brush on the honey/lemon mix. Sear in a HOT pan with olive oil until you get a nice golden crust, by then the fish should be full cooked through. If not flip for a minute.
I did this with halibut this weekend - amazing. and easy.

Like a bunch of people have said makes killer fish tacos!
We use to do it blackened Cajun style with mango and pineapple salsa.
Great tasting fish, freezes really well too.

It's not as complex as it looks, a lot of repeat ingredients.
I've done the hot sauce two ways. Either char the hell out of a whole pineapple then peel and put the fruit into the pot...or peel and grill slices with a little canola to get a good sear.
Substitute mango if you can't get pineapple pulp. Some stores have it frozen in chunk form or with the frozen juice.
The hot sauce is awesome. I use it on my scallop grilled pizza

The condiments are so good if I run out of fish I just make a taco with slaw, salsa and hot sauce the next day
It's a great dish to make in the summer with a bunch of people.

Barbeque Mahi Mahi with Mango Salsa
3 - 1 ounce portions or larger of fresh fish or any firm fish
½ Red Pepper ~ Finely Diced
½ Red Onion ~ Finely Diced
1 Cup Mango ~ Finely Diced
2 Tbl Cilantro
1 Lime (juiced)
Garlic/Salt/ Pepper Mixture ~ Approximately 2 Tbl
1 Tbl Fresh Minced Garlic
1 Tbl Rice Vinegar
½ Cup Fresh Mango Juice
1 Tbl Olive Oil
¾ Cup Soy Sauce
Marinate fish in Soy sauce for 25 – 30 minutes
Before starting to mix salsa begin heating your barbeque
In a large bowl combine the following:
Red Pepper ~ Red Onion ~ Mango
Cilantro ~ Olive Oil ~ Rice Vinegar ~ Garlic
Squeeze lime juice over mixture
Garlic/Salt/ Pepper Mixture to taste
Mango Juice
Stir well and let set at room temperature for 35- 40 minutes.
Place Salmon on barbeque meat side down (skin side up).
After 2 -3 minutes flip carefully. Marinate with remaining Soy Sauce.
Cook another 2-3 minutes. Fish will begin to flake.
Do not overcook.
Remove from barbeque and top with Mango Salsa
