It’s a lot of work. It’s like a farm chore thing. Every morning and night I collect the sap and freeze it in 5 gallon buckets. When I get 15 gallons of sap I reduce it down to about 2 1/2 quarts.
My biggest walnut doesn’t provide a lot of sap. In fact it’s one of my poorest producers.

I had no idea what to expect when I started this and I just went for it. My 2 maples provide about as much as my 10 walnuts so with that said, I think if your trees are like mine, you will get a quart if you just bank what you can get. Honestly if you can get one big pancake breakfast out of it, it is worth it. It’s incredibly satisfying.
After typing all of that, things may change in the coming weeks and my walnuts might explode with sap.
