Carnival Cruise (fishin?)

Hey Guys!
My Family and I are going on Carnival Cruise
(Triumph-One of thier newest ships) In Late Feb 03 .. We will be going for a week,

((From, Miami-to- Cozemel(mexico) , Grand Caymon, Ocho Rios (jamaica) ... with a day at sea in-between..))

Anyways,, i will have the oppertunity to take a 3hr fishing charter if i want,, has anyone fished these tropical waters ? and i know it is 85º + in Feb in them areas,, so will they have fish still ? (i will also scuba dive at cozemel, hope to see some fish)

Obviously there is no stripers and blues , or am i wrong?

I would like to catch a dorado , that possibe around there?
