i have worked for a 5 star restaraunt and we always steamed
shellfish. it gives it a much firmer texture. use only enough
water that will not dry up before its done cooking and add
2 tablespoons of white vinigar to the water. it really helps
bring out the flavor of the lobster,shrimp or crab. a 1 1/2 pound
lobster usually took 10 to 15 minutes to cook fully, depending
upon the molting stage of the shell.
