If you are just starting use eels - try the circle hooks - Gamagatsu 5/0 work. With the rod tip fished near verticle, drop the tip "bow to the fish" at the instant of the tap. let out a little line (if conventional) - typically until the first pause but it varies by fish and it's just something you learn - and start retrieving with the rod tip low. Once the line is tight raise (no jerk) the rod tip up and fight the fish. If you are using the traditional method with regular 6/0 Mustads (sharpened) do just like Sandman says...
Personally - I like circles for cut bait (which I rarely do) - don't like them for live-linning fish - and the jury is still out on eels but it is the easiest way to get started on them...
