When I run out of fish I keep one. I usually just eat fish and veggies( my wife is a vegetarian). I used to only eat fresh fish, but now I freeze up bass. The key is to not rinse the fillet in fresh water before freezing. I just had some bass from about a month ago and it tasted good. That machine that sucks out all the air helps too. I've also found that it does'nt matter how big a bass is, to me they all taste the same. You just have to make sure you bleed the fish. Most guys when they catch a big fish don't bleed it for fear of losing weight. The key to a nice clean fillet is bleeding the fish. I find this most necessary in Tautog. I agree, nothing beats a fresh fillet of cod,bass or Tautog but frozen works too. Don't underestimate a fresh piece of bluefish that has been bled properly. To me a fresh piece of bluefish tastes better than bass.
