I have not bought fish in the market for years and after going cod fishing this winter I know why. You can not compair the taste smell and look of fresh caught and vaccum sealed fish to market fish. That said heres my fav. but all must be fresh caught and sealed.
1 cod
2 mahi
3 swordfish/mako
4 fluke
5 black seabass
6 tautog
7 striper

They're all good, but haddock and sea bass are att he top of my list.

Skate wings in a brown butter sauce is a classic french bistro dish. Making scallops out of skate wings is an urban legend. If you have ever looked at a skate wing you would know why.

If you eat a fresh bluefish marinated in teriaki for an hour then grilled it is very tasty. Also, makes a great smoke.

If you're gonna list sword, make sure to list thresher, because thats what you're eating 1/4 of the time and you don't even know it.
