Boulter has nice long sheets as you probably know. Theat will be a funny shape when layed on a flat board with lots of wastage from the sheet. I suppose you could strip it with plywood in directions too with less waste.

Know what you mean about the space, I started building a layout boat in my basement once. Had to stop half way through when I realized I wouldnt be able to get it out the bulkhead!
