I did that to a 45 cm pollock last summer at Shoal's marine lab, but I did it the tedious way, hanging over a hot plate full of boiling water. Dipped it slowly and picked little bits of meat off a time. Dipped it in peroxide, it came out really cool and not too stinky. Very tedious though.

60 % of the time, it works every time.

Filet a big fish, put the rack in a fish tote with a piece of plywood over the top with a cement block over it . Put it as far from the house as you can and let the maggots do their thing on it. I guarantee they will strip it clean... ask me how I know
