Do a forum search....lots of info on handcarving!  Alot of guys use a home made vice and a spoke-shave to carve with as opposed to a knife. Many here will be happy to answer your questions!

ya know I did and the forum search engine gave me little to nothing which I thought was odd...if i can just fix things with just a hammer when it comes to technology...

But anyway, I do have a vice however its stationary as it is bolted down to a table.

I didn't like that first jig I made ,, The post were too big . This is a second attempt ... You can still modify .. I had to notch the top so block would'nt spin when carving ... after thought .. And making little blocks to hold the plug were a PIA ,,Hard Maple..You may have a better idea . could even be metal .. .. Only thing you should do is use hard wood ,,especially for the octagon .. I used yellow heart so I can crank the vise up on it and it dosen't mind .. Carrage bolts and tubing they run through you can get at HD ..
