We have a set of Cutco kitchen knives and they really are great.

For filleting bass, I like my heavy-bladed serrated Dexter-Russell for tough cutting, and my old Buck flexible bladed one for skinning.

Bluefish are a lot easier and the Buck still holds a good edge after all these years.

Just picked up a new Buck at the RISAA show

Guess I've retired my old flexible Rapala with the wooden handle - after 20 years I suppose I got my 50 cents worth out of it - but it's useable in a pinch and still holds a great edge
