Pat the fish Dry, very dry, Mix either maple syrup or honey with some lime or lemon juice. Season the fish first with salt and pepper.
Brush on the honey/lemon mix. Sear in a HOT pan with olive oil until you get a nice golden crust, by then the fish should be full cooked through. If not flip for a minute.
I did this with halibut this weekend - amazing. and easy.
