Here's the easiest way you'll ever cook striper. It looks like a joke. But try it!

1. Remove all traces of the red meat from a couple BIG fillets.
2. Cube them into bite size pieces.
3. Bring a pot of VERY salty water to a rolling boil (like seawater salty).
4. Add fish, and bring water back to a boil. Boli fish for additional10 minutes, (Yeah, I know, sounds like too long)
5. Strain, and pour melted butter over the chunks.

DONE. tastes much more like crab or lobster than fish. Old dude told me about it. I really thought he was busting my balls. I tried it. freaking awesome. (and I KNOW how to cook).

Sometimes I'll sprinkle some old bay on top...

I have the recipe for marinaded tuna from the old "hanson's" restaurant on the pond in Wakefield. I'll see if I can dig it up and post it.

I just prepared and ate Chef Chris's Mediterranean Style Striped Bass served over angel hair pasta. Delicious.

Good One Larry

Ok I did and I'm glad I tried it Larry, although I only got one small taste. I had a 50+ person party with everyone bringing something to eat and I had two keepers from last Tuesday I wanted to cook, but I didn't want to do much cooking other than prep work. Nice one and 8 lucky couples who grabbed one of these thanked me repeadedly for getting to eat this yummy fish dish.

Marinate your striper filets for 2 hours in italian dressing prior to cooking this dish.

On a piece of tin foil.....lay a bed of 3 Romaine Lettuce leaves 1 on top of the other. (This is done for each serving...so 1 filet per piece of tin foil)

Then place the marinated filet on top of the lettuce.

On top of the filet place thin slices of tomato to cover the filet.

Then place sliced onions on top of the tomato.

On top of the onions shave the sweet corn off of a fresh boiled corn on the cob...just about 2 tablespoons of corn on each serving.

Parsley flakes and pepper on top and then drizzle a little more italian dressing over the top.

Fold the tin foil up around the serving to cover it and bake it for 20-25 minutes....grill is preferred but a stove is fine.

When done open the tin foil, grab the romaine lettuce and slide it carefully onto your plate.

Time to eat!

If this is not one of the best ways you have ever eaten striped bass I will eat my hat! Try it and you will like it!

There are several here who have had it and maybe they can chime in on the results!
