Black Seabass recipes needed

Getting some fillets delivered to the door Friday. How do you like your Black Seabass?

My go to is clean, dry well, roll in egg and then I cover with a mix of panko and chef Paul’s blackened redfish magic I have mixed well on a plate. Like to roll and pat down the filets to get a good covering. I have a cast iron skillet with canola oil heating up on a grille side burner and a metal flat cover helps get it really hot. I don’t put so much oil in that it covers the filets, just enough to brown the bottom and side. Getting the oil really hot insures a crispy filet and it goes quick, not more than a minute per side usually, unless the skillet is packed then maybe a bit longer, less packing also helps them brown well.

Garlic powder celery powder pepper old bay some produce barn (norton ma) magic dust little paprika mixed with cayenne and flour. Do an egg wash flour mixed with seasoning back into egg wash then rolled in Panko with little shredded parm then fried. I know it’s a cheaters easy way out but I have a fondue kit I use for nothing but frying fish one of those wedding gifts you hate to throw away. Then make a mango salsa and use for tacos

God don't fillet if possible. Keep them in the round, stuff with herbs and lemon slices, copious sea salt and olive oil outside and grill on a well oiled grill. One of the best eating fish IMHO.
