huge problem with them running over in texas. thats where all of the meat i buy comes from. i have 6 racks in my cooler at work right now. the meat is very similar to pork, a bit more flavorful. will serve the rib chops grilled, mashed 'taters, braised red cabbage, bourbon demi glace (type of brown sauce). i heard there is a specific type of dog bred in argentina (?) to hunt them. they pack the dogs with kevlar vests, they run down the boar, they are then tied up and killed with a knife. this supposedly preserves the integrity of the meat for some reason. i'd drop one, can you do any guided hunts anywhere close? man, that would be one hell of a barbecue!

The dogo
In the 1930s, Antonio Nores Martinez attempted to breed a big game hunting dog that would also capable of being a loyal pet and guard dog. Martinez picked the Cordoba Fighting Dog to be the base for the breed. This breed is extinct today but was described as a large and ferocious dog that was both a great hunter and fighter. He crossed it with the Great Dane, Boxer, Spanish Mastiff, Old English Bulldog, Bull Terrier, Great Pyrenees, Pointer, Irish Wolfhound and Dogue de Bordeaux.[1] Martinez continued to improve the resulting breed via selective breeding to introduce the desired traits.

There are plenty down here..They taste good too..
I use a 270, plenty of gun if hit right. I also get 'em with my bow.
