Key Largo kayak trip

Hello -
My wife and I are going to Key Largo in a few months with kayaking on our minds and have found plenty of places online that rent yaks.
Anyone have any advice as to where to paddle, fish, rent yaks or guide services in that area? What not to do? Further down the keys is good too.
I know it's early, but we are hoping to cut down on scrambling around to figure out where to go.

dan, some info -
I'm not trying to spook you but be prepared for a few things-
1. I've fished the keys , in the shallows and frequently saw large sharks.My dad fished a kayak for years and always saw sharks. I doubt you'd be in danger but dont want you to see them and ruin the trip.
2. The channels, islands, mangroves can be very confusing - if you dont go with a guide, be careful you dont get lost

I think that area is one of the most beautiful in the world and think you'll have a great time, just want you to be aware
