Trigger Fish

I catch occasionally when soaking crabs and today was my personal best, I have to ask; are these decent eating? This is my third this year, but this one was a slob.

Damn just watched a chef video on how to filet and I guess south they are on many menus, flesh looked white and firm. Ironically the video was almost the same size fish.

Excellent. Skin is leathery though so you need a very sharp knife to filet.

They are delicious! Trick to filleting them is to stab them to get through that tough skin first and then use the opening to work your knife in.
