If you meant me, I use a small artist's brush to paint my gill and fin details. Here is a pic of a bunch of mackerel I did for a swap showing some gill, pectoral fin, and mouth detail. And a yellow perch to show some different gill detail. (And no red chin splashes) I don't use an airbrush. I use a toothbrush and artist brushes to do all my painting.

I have only carved gills on a couple plugs but I like the look of your recessed gill and red mylar and may have to give it another try.
