I made/copied a flaptail very similar to the one in the bottom of that picture (probably the same plug but I can't see the nose to be sure, the one I copied had a little cove on top of the head like a pikie only smaller). I turned it out of birch, which was what the original seemed to be, but it has been a disappointment. It hasn't fished well and has less action than those models with a wider head and narrower tail. It also floats too low in the water. If you copy that one, I'd use a more bouyant wood. I've also found that flaptails work better when the front eye and spinner connection are both off center.
