i had a friend/neighbor who could cut that fast
he once got me a job unloading scallops
on the newbedford docks..........
he noticed a purple vein going up my arm
and then grabs me saying you have fish poisoning!
Craig....and i recounted how i got stabbed by a striper fin
i got rushed to the doctor for shots
he saved my life!
a day later and it would have reached my heart
and most likely killed me.

I'm not that fast by anymeans, but most of the racks are pretty transparent.....

I find the biggest trick to fileting is a good knife that is REAL sharp.

Razor sharp knife helps a lot and not being exhausted from fishing all day helps too. Very impressive.

and having a very large surface that is very stable and made for the job. standing up straight, etc...
not saying I could ever cut this fast, even in a cutting room, but it helps the fast become faster for sure....
