Call me crazy, but I think stripers taste like fermented warthog rectum. Okay, not that bad, but even the smaller ones don't taste that good to me.

Cod, scup, sea bass, tog, blowfish? Every legal sized one I catch ... it dies. I've even eaten skates and sea robins and big choggies and liked them.

Bloos have one redeeming quality. If you catch the right ones and prepare them right ... I'll eat them too.

funny you say that....

because bass seem to have this after taste of where ever they've most recently been

but to my pallet: Bluefish and Salmon taste like the brown part you CUT Off a swordfish steak and toss it.... prolly make a good strip bait... for flounder...

but it's JUST way to oily for me... it's only good food for otters, seals, and sea lions and bears and sea gulls.

When it comes to bluefish I like to dehead them while live then fillet, skin and remove as much of the dark meat as possible before they hit the cooler. When I was a mate I would do this while still fishing (preferably within mins.) so the customers would get to see how good bluefish can taste. The sooner you get the dark meat out the milder the fish will be.
