Agreed. I've had steaks that were vacuum sealed and 9 months old. While definitely not as good as completely fresh, it was still better than the stuff you buy at the supermarket.

Wipe down the steaks, vacuum seal them right away and into the back of the freezer. It's nice to enjoy good fish during the winter.

Take the frozen fish out of the bags and place in a colander to thaw and it will taste fresh again. Might have something to do with the air getting at all sides while it thaws, it works try it.
