I find most bass spit the eel itself out after getting hooked (eel is hanging outside the mouth during the fight. Also I rig using 2 hooks and bass hooked with the tail hook are often foul hooked on the outside of the their jaw or under the chin , etc) so there is little damage ever by bass.
I freeze in ZipLoc bags too. All of the rigging eels I've used this year, including the one in the video, were frozen last fall. I've caught a pair of 40-pound plus fish on them. The bass don't care about freezer-burn.
