i alway prefered putting the chick in a metal funnel taking a sharp knife iand cutting the neck just behind the head you then put a weight in that cut ( a brick with a coat hanger run thru it works good ) this does several things for you It keeps the bird still so it wont bruise as with some of the other ideas here also the blood drains into a bucket instead of splatering all over as the bird flaps around. When done cleanig the birds in Kansas we would save all the guts for cat fishing that night.
