Nothin' like landin' a fatty from a yak!! I was yak fishin' for years before it became popular.
Try a 7' graphite rod with a medium weight reel. Easy to flip it into those tight spots. Any yak will do. I rigged a keewee 9 footer with a pole-holder and some bungees for those guest-yakers. It works great!
To bring 'em in, try a short handled gaff hook. If they're to big to haul in the open, you can at least drag 'em to shore.
As far as a fish-finder for a yak, u might as well buy a boat.
Keep it simple. Spend more time looking at your surroundings than some screen. The water, bait-fish, wind and the birds will let u know where the fish are.
