Over here in the UK the following big baits big fish . Sea worms work well by them self or cocktailed with squid or clams to make a big bait. Fish baits can work again cocktailed is best, soft back crabs are a top bait . If you are fishing from sand its best to fish with about 6oz breakout lead this will hold you in the sand then with a good pull the the wires will release a 4/6 o hook should be fine fitted behind a impack sheild this will keep your bait intact till it hits the water. If your fishing over rough ground you might want to try a rotten bottom rig this wiil let you catch fish with out the lead becoming snaged up in the rocks or weed, you can all so use sliders which let you fish a long flowing trace that can be cliped up for casting but will un clip as soon as it hits the water.
If you want any diagrams i am sure i could send you some
