Hook it up from the bottom jaw and out an eyesocket, won't kill it.
Dead eels work just as well, just keep it moving.

I use the #^&#^&#^&#^&#^&#^& (patent pending) method of hooking down mouth and out the bottom. I keep them on ice to calm them but I DO NOT WHACK MY EEL. They seem to settle down after a while and perk right up right before a ($%(%& bluefish bites them in half....

I hook 'em under the jaw and out either left or right eye socket depending on where Im located in relation to any current in the area. Hope this helps, also take a look in the how to section for the keep cool bucket that should help you out, best to handle the eels with either a dry rag, or a green scrubbing pad.
