Physically- for the strike, the peel of the line, the unkown of what is on the end of your line, the adrenaline of the fight the boost when you see what it is, time on the water.
Mentally - decompress, time to think, time to not think. I didn't start fishing seriously until after my dad died and he was a big fisherman, we had our deep sea fishing trips and whatnot but never actually connected on that level. It makes me feel close to him, finding a connection and a way to keep him around.
Also, its a hell of alot of fun
