I find I gut hook a LOT of fish with the tandem hooks. I just make a little incision in the side of the bait and snip the wire. The other reason is that the back hook has been known to tear right off the wire resulting in a lost fish. If that wasn't enough, that back hook doesn't take much force before it straightens out.

Tsunami makes a 9" bait sporting a single 11/0 hook. It's the way to go, imo. Both the Tsunami and Storm hooks can cause heartbreak...

The canal god that gobbles up jigs loves big shad! I lost many last year and decided that the canal special with pork rind was just as effective and just as efficient.

I fish them quite a bit and started by using both hooks. I found that even bass about the size of the lure itself were INHALING them, making it very difficult to get a clean release and not injure the fish. Gut hooking is the pits with these things. Snip them off!!
