I will second or third The Allmans Bros. - Live at the Filmore East, Lou Reed's Rock n Roll Animal. I will add Skull and Roses from the Dead as I always thought they were better with only one drummer. Dwight Live from Dwight Yokam is a great record. I would also suggest Richard Thompson's Live from Austin Tx criminally under appreciated guitarist and songwriter.
Unofficial releases: Rolling Stones Ft. Worth Texas 1978. Great sound and the last tour the band played with Wyman and minimal help from other musicians. Easily found on the web's usual suspects.
Springsteen - Ain't Nobody Here From Billboard Tonight from 1975 and You Can Trust your Car from a Feb 1975 show where many of the Born to Run song were not finalized and have different words and arrangements. Thunder Road had a different title and a latin horn samba ending!
There are tons of Dead shows available and a lot of it depends on which version of the Dead that you like but my favorite is a radio broadcast 5/16/72 from Rotterdam which has a great mix that lets you hear clearly the interplay between the guitars and bass.
Last one Gov't Mule New Year's Eve 07 with a whole set of covers from the sixties. Great idea from a band that is confident enough to try something different
