Granite is usually 1-1/4" thick, 1" sounds way too thin to me, like Clogston said, could be trouble mounting a sink.
I do solid surface and for do it yourself, I'd have to say most people are not cut out for it. A good mechanic is capable as long as you are familiar with all the intricacies and requirements, besides there will be no warranty if you are not certified.
Cabinetry you'll find to be quite a broad spectrum, from as low as 4 grand to over 40 grand, depends on what you want or are willing to pay. Penny Pincher or Kitchen Sales up to Weston Kitchens,Metropolitan or Kotchman-Reighdt and Haig . You may find more and more unscrupulous cabinet companies claiming there product is custom, or solid wood, when in fact they are stock sizes and plywood sides, nobody makes a case with solid wood, ya sure the plywood begins with solid wood veneer but get real.

Beaver woodworking has all the supplies you'd need at retail prices except solid wood, Burns power tools, Downes and Reader, you could order doors from many places even some locally
If you want to do it yourself, you could begin with buying all the machinery, the materials could be found locally if you do enough research, by the time you get done you'll have a new kitchen and a set of tools to sell on craigslist or keep for the future projects. In the end I doubt you'll save much.
