If your plot has had good drainage, I'd wait until the foliage begins to die before harvesting. Remember that as the plants begin to "fade", they send all their energy and nutrients to the spuds. If you can afford to wait, you patience will be rewarded.

Oh, and don't forget to let them dry out before you store them. The skin needs to dry for optimal tater shelf-life!

As for sweet taters, I couldn't say since I've never grown them before.

Thanks Tim, we are leaving the yukons in the ground. They have no vines at all on them but the ones I can see that grew on the surface look great. The smalls ones are destined for the first beef stew of the season.

The sweets have been cooked, the ones that were big enough. She put 19 quart size containers in the freezer of the sweets. The smaller ones will be used for stews as well.
