Favorite spices

I'm a lover of HOT foods and the sauces ,rubs, or marinades that make them that way.#1 on my list is Walkerswood Jamaican Jerk Sauce,it goes great on everything especially shrimp(right Hab).Nobody can eat hotter food than my brother though.JohnR can attest if he remembers any of iron Mikes 40th.Wendells in Norton,Ma. makes a suicidal wing that's like lava and my brother doesn't even break a sweat.Any others I should try?

Lewes, Delaware has some outlet stores, and one is ALL hot sauce. Heaven. I think it's called Chili Peppers or something like that. Not sure if they have a website. Of all the sauces I've gotten there, I'd suggest "a$$ in the tub" hot sauce. Although true to its name, it does have a good flavor while being wickedly hot. Not something many of the hotter sauces can boast. Stay away from "hot as $hit". It is, and it makes you drool buckets.

The worst day fishing is better than the best day working. ...Wait a minute, my work IS fishing. Sweet.

my favorite hot sauce comes in 2 styles.. a chunky garlic/pepper and a thinner straight up chili sauce. please pardon my bastardization of the name, but i think its called "Tong aut toi". I use it on everything.

daves insanity suace is right up there too.

I like a spicy chili washed down with Harpoon IPA.Think that's my meal before the MSBA show in Foxboro.I'm gonna stand next to Tattoo's booth unless he gives me a jointed darter.

I love hot food, but not to the point where you loose all flavor. A lot of the specialty hot sauces are just chemically mutated vinegars.

My favorite, as I believe I am the only other resident chef, with the exception of cheferson, is the rare, secret "bear farts," used by Horatio Sands in the SNL spoof of the Iron Chef tv show.
Also, Pato Brand spicy tomato sauce (Mexican) is great for stews, without being overpowering.
Goya Habanero sauce is $1.69 at the local supermarket...straight habanero heat and great vinegar balance...makes your over easy eggs taste like heaven!!!
There's plent of culinary types out there with enriched capsaisum concentrates that will paralyze your mouth...not so much my thing.
I love to taste the different strata of pure chile balanced with a little garlic, acid and lime.
Probably the best and most favorite of my pepper spices came for my buddy Paul Makishi's Peruvian mother.
Every time he went to vistit her she made me four or five mason jars of this stuff...pura salsa verde...habaneros, lime, cliantro, garlic and salt...
THE PERFECT CONDIMENT!!!

My favorite spice is fresh ground Nutmeg. I love the smell when you first grind a fresh nut.

As far as hot stuff goes , I thought i had seen it all with "More hotter ,More better" but then I went to New Orleans for Mardi Gras and saw about 100 types there that were all hotter than anything I had seen. I don't like the super hot rocket fuel stuff.

I'm more of a Jalapeno type guy , not a habanero guy.

If you guys like Hot you should get your self "The Source"......7.1 million scoville units.

To put it in perspective a Habanero is between 200,000 and 350,000 scoville units....that makes The Source over 20 times as hot as a habanero

The source sounds good DF, but at 85.00 an ounce......
I have made my own habanero sauce and it was fantastic, but you had to have a tolerance for heat to even look at it
Seasonal herbs fresh from the garden, basil with fresh tomatos, time with a chicken, rosemary with a boneless leg of lamb. The point is fresh from the garden.

Dave's Insanity sauce

Blair's Sudden Death Sauce

Tabasco Habanero Sauce (not bad, but alot of vingar).

The hottest I have had though, was a jalapeno, habanero, serrano salsa that the mother of a friend of mine used to make. Wow. What a burner!

The hotter the better! Nose running, face turns red, sweating, eyes watering is the best.

Wings to go in Rhody has some that are getting close. Volcano Wings used to be pretty good but they are out of business now.

As far as hot sauces go, my favorite that I don't make is East Armageddon Hot Sauce. It truly feels like the world is ending in your mouth, right after a half second burst of enormous flavor. My latest 2 batches are a roasted veg, using jalapenos, carrots, onions, fresh tomatos and garlic. Aged it for a year. Very mellow heat. Long flavor. The other was a straight up smoked habanero. Holy Hell Hot Sauce. Yipes! Favorite spice for the last couple weeks is cardamom. Been doin a bunch of indian inspired stuff. Even goes great in fresh bread.

Actually its jamaican. made with peppers (scotch Bonnet) Garlic other spices...lots of times it has Lime juice......real good stuff

They usually have it in a carribean market or the international section of Stop and Shop,Get the walkerswood brand though,the stuff is the nads.
