my favorite fish

is generally the one i catch

it always tastes the best...

but my favorites are
red snapper... truly the chicken of the sea
trout is a delicasy mmm mmm
flounder is out of this world
swordfish on the grill is un surpassed (perfecto)
orange roughy cant be beat
bass filets are as light as a cloud
talapia tastes as good as fillet of sole...
shellfish: scallops rule... and lobster wins.

Fluke is my least favorite.
I eat fluke if there's absolutely nothing else available,
Even though it's as pure white as the driven snow,
it's just too dry;
even if it's undercooked, or cooked in such a manner as to try to not dry it out.
It's just too naturally dry of a meat.

I'd much rather eat talapia than fluke any day.

As far as shellfish go
I can almost guarentee that I've eaten more scallops in the last 25 years than anyone here.
I NEVER get sick of 'em.
That would be like getting sick of Recee Cups.
Lobster speaks for itself and fortunately, we get our fair share of those as well.
Best way to cook lobster?
Tied between sautéd in butter or stir-fried.

I have not bought fish in the market for years and after going cod fishing this winter I know why. You can not compair the taste smell and look of fresh caught and vaccum sealed fish to market fish. That said heres my fav. but all must be fresh caught and sealed.

1 cod
2 mahi
3 swordfish/mako
4 fluke
5 black seabass
6 tautog
7 striper
