favorite striper recipe

I did a search and there are a few recipes for the grill and "another good recipe" type post etc etc.

Out of all the way's you've tryed, what is your favorite way to cook striper.

For me its a simple ritz cracker butter salt/pepper i few herbs and bake on 325 for about 14 minutes...with a side of rizoto, choice of veggie (sp?) and wine of choice...usually red. simple yet effective

Grilling with a garilc and herb o/o baste is a close second. like fishing...low and slow for grillin too. (have only had 2 tries at this type)

has anyone had a recipe/experimentation that went completly south?

Pat dry the fillet, rub both sides with olive oil and salt / pepper.
On a very hot grill, each side about 5 minutes(adjust for thickness), serve with beer, rice and salad you're all set.
I'm sick of striper now, I need fresh cod.

Add some fresh tyme to the mix also... My favorite.

A few others:
1. Golden dipt fishfry mix (NOT batter) delicious sandwich fare. I use the thinner tail meat.
2. Boil the fish for 10 minutes in VERY salty water, drain, dip in butter. EXCELLENT.
3. Use leftover above fish in place of crab for crabcakes. Use the recipe on Old Bay as a guide.

I gave a peice to this spanish guy out in our warehouse and he brought me in some that he made at home.....it was the mocst spectacular peice of fish I had ever had

he made it with onions and spanish olives with some vinegar, lemon juice, Adobo seasoning, Goya Sauzon, and Goya Sofrito. Threw some shrimp in it for good measure...spectacular.

all but the shrimp sounds fantastic.... i will be spending the night in the hospital if i ate that combo

Last week it was 4 days straight of quahogs, prepared various ways. Raw on the half shell, steamed, linguini with white clam sauce, and chowdered. You'd be surprised how far a peck goes between 2 people. About as far as the fillets from a 33 pounder. Beats dropping my dwindling funds at Stop & Shop.

Fortunately my wife can cook. If I ever get some bluefish, I'll see how she can rise to the ultimate challenge

i hear ya on that one.. one year maybe 20 years ago..i stayed with my grandmother for the summer on long island. I brought my thumb button reel (not sure what those are called) and rod and caught baby bloo fish from the beach all summer. lots of fun and those were tasty as i recall.

fast foward 20 years, im at thanksgiving, someone brings a smoked bluefish ordeurv (cold) and a dip... i take one bite and do all i can not to up chuck as i politely swallow the vial crap.

My favorite is to chop them into finger food sized pieces, bread them and fry on a pan....and vuala...striped bass nuggets...throw in a few cut lemons for the side, mmm they melt in your mouth

I marinade striper steaks in Soy Sauce, garlic, pepper and Olive Oil for about 30 min to an hour. Cook on greased grill. Olive oil helps fish not stick to grate + flavor. Awesome. Soy Sauce carmelizes outside somewhat. Very flavorful but not overpowering.

Fresh caught wild striped bass is very desireable...most restaurants would kill to be able to serve that quality of fish.

That being said...keep it simple.

Another Recipe ... tastey

I've eaten striped bass a million different ways as most of us here have ... here is one of my favorites and I have yet to find anyone who has tried it that did not like it ...

Striped Bass Crab Cakes

2 pounds striped bass
Old Bay Seasoning
Bread crumbs
S&P
Mayonnaise
lemon
Fresh carrots
fresh green & red peppers
onions
Corn (if you like it)

Steam the striped bass fillet until done -- put salt in the water and lemon juice -- salt supposed to make it boil faster and the lemon imparts a nice taste

Meanwhile - dice and chop the vegetables to a fine chop
Saute the vegetables in a pan

When the striper is steamed, mix into a bowl the mayo, Old Bay, bread crumbs, S&P, a little lemon juice ... then add in the sauted vegetables

Take the mix, make into patties and grill the fish on the grill. If it is raining outside, broil them ... but grilling is always better.

Eat with fresh salad and choice of beverage.
