That's very generous, Niko. I'd love some if O.D. Mike could pick it up for me. Mike, I'll give you some dough for gas or some eels if you can get some for me.

I hope you at least tried some Niko! Tough getting rid of 5 fish where one is over 60lbs?

Thanks for the slab of yellow you gave me, on the grill tonight side-by-side with albacore to see if there is a difference.

I've been up and down the street to some of the neighbors. This stuff is unreal fresh. My wife LOVES the seared ahi tuna appetizer at Outback. We just had the homestyle version and it was awesome! (though she went to Outback to pick up her favorite sauce :-). I think we'll be having it every day this week as I keep the fish on ice. Will probably freeze what is left next weekend.

Did the taste test tonight: yellowfin vs. longfin albacore. Finally found one the wife likes: albacore. Definite taste difference. Can you tell by looking (hint: 1 yellowfin)? Lightly smeared in Virgin olive oil and pinch of black pepper, you don't need to do anything else to perfection!

Only one mahi in the group, got to talk to ThrowingTimber. I was hoping to catch lots of mahi but NO. Only 2 or 3 boated on the whole trip.

Hey TT: got any left over mahi for Raider and me?

I've had very good results freezing yellowfin. Freeze it and then wet it down and back to the freezer, this will form a thin coat of ice to protect the meat. When you want to thaw it remove it from the bag and place the frozen meat in a colander so air can move around all sides while it thaws evenly, it is very hard for anyone to taste the difference...give it a try when you have more than you can eat fresh.

The sooner you freeze it, preferably vacuum packed, the better the results when you pull it out to eat. Don't wait. Start freezing some today.....

Try the wahoo by dusting it with macadamia flour (this can be made by pulsing macadamia nuts in a food processor), sear in a little butter and then into a 400 degree oven for 10 minutes.

Top with mango, hot pepper, tomato, and cilantro salsa and serve with a green vegetable and coconut jasmine rice.

Nice plate on a hot day like today. Glass of New Zeland Sauvignon Blanc and you're in heaven.
