Use less hair, and clip the butt ends of the hair on an angle. This way when you wrap over them with your thread you have a nice smooth head.

I've seen Bob Clouser tie flies, and he will also wrap over the bottom hank of hair, half way down the shank. This is with bucktail, and prevents the hair from wrapping, and gives a slimmer profile.
