Get Paul Prudhommes Redfish Magic and sprinkle it on Both side of a steak then heat up a cast iron skillet smokin hot and sear both sides, Remember to keep it raw in the middle, Best way. If you have a side burner on your grill you may want to do it outside. It creates a Chit load of smoke.
